Paying means sending funds out to a third party. Pick the rail that matches cost, speed, and destination — the request shape is the same across methods, and only the destination and rail-specific detail change.
Paying a third party is different from Transfer funds (moving money between accounts you own) and from Collect (pulling money in). Save the parties you pay as Contacts so you can reference them by id instead of re-keying details.

Issue a physical check mailed to a payee's address.
